Dijon Pork Roast with Cranberries
Elaine Brown serves up a delicious pork loin on Let's Dish. Featured January 13, 2010. Ingredients:
1/4 teaspoon ground allspice
1/4 teaspoon salt
1/4 teaspoon pepper
2 to 2 1/2 lbs of pork loin, trimmed of excess fat
2 Tablespoons of honey Dijon mustard
2 Tablespoons honey
1 cup dried cranberries, or 1 can of cranberry sauce

Preheat oven to 400 degrees. Combine allspice, salt and pepper and sprinkle over roast in a baking dish. Stir mustard and honey together and pour over roast. Then sprinkle with cranberries. Bake for 25-35 minutes, depending on how hot your oven is.

If you don't have Dijon mustard, spicy brown mustard works just as well. I also prefer to use cranberry sauce rather than dried cranberries, but either one would taste great.
