Autumn Pumpkin Spice Fudge
Mary Johnson, of Hillsboro, shares a fudge recipe with a seasonal twist. Aired on Let's Dish September 23, 2009. Ingredients

3 cups sugar
1 cup milk
3 Tbs. light corn syrup
1/2 cup cooked pumpkin
1/4 teaspoon salt
1 tsp. Pumpkin pie spice
1 1/2 tsp. Vanilla extract
1/2 cup butter
1/2 cup nuts

Combine sugar, milk, syrup, pumpkin, and salt. Bring to a boil stirring constantly. Reduce heat to medium, until it reaches 232 degrees on candy thermometer or soft ball stage. Remove from heat, stir in spice, vanilla, butter, and nuts. Cool to lukewarm, beat until thick, pour into 8-inch square pan
