Zucchini Bread
Green Bank resident Linda Stewart shares her take on a classic quick-bread recipe. Aired on Let's Dish on September 16, 2009. Ingredients:
3 eggs
2 cups white sugar
2 cups zucchini, peeled and shredded
2 cups flour
1/4 tsp. Baking powder
1 tsp. soda
3 tsp. cinnamon
1 cup chopped nuts (optional)
1 tsp. salt
2 tsp. vanilla
1 cup vegetable oil

Beat eggs, add sugar, oil and zucchini. Mix. Add sifted dry ingredients and mix. Add vanilla and nuts. Pour into two greased loaf pans. Bake at 350 degrees for 1 hour
