Summer Squash Casserole
Joy Smith shares a great recipe for using up all that summer squash in your garden. Aired on "Let's Dish" August 5, 2009 Ingredients:

4 Cups cubed Yellow Squash
1 Cup chopped Green Onion
3 Tbsp butter
1 Cup Shredded Cheddar Cheese
1 Cup soft Bread Crumbs
1 Cup Milk
3 Eggs slightly beaten
1/2 tsp salt
1/4 tsp pepper

Arrange squash and onion in a steaming rack, and steam to the desired degree of doneness. Combine squash mixture, butter and cheese. Stir until butter and cheese melt. Combine remaining ingredients and stir into the squash mixture. Spoon the mixture into a 2-quart lightly greased casserole dish and bake at 350 degrees for 30-35 minutes or until casserole is set.
