RECIPES
- 1 cup fava beans, cooked in boiling water for 5 mins. Note: can use frozen if fresh not available). Also , edamame can be used as substitute.
- 1/4 cup evoo
- 1 1/2 cps arugula
- 3 tbsp grated Parmesan
- 1/2 tsp lemon zest
- 1/2 tsp fresh lemon juice
- Salt and pepper
- Good baguette
- Garlic cloves
- 20 mint leaves
Directions
- Cook favas (peel if necessary), pulse in food processor to slightly coarse.
- Remove 1/2 and set aside.
- To the half still in the processor, add evoo,
zest, lemon juice, 1/4 cup arugula, and salt and pepper to taste and purée
til smooth. - Fold in coarse favas and the remainder of arugula (chopped).
- Readjust salt and pepper.
- Slice baguette, drizzle with evoo and rub with fresh garlic.
- Spoon bean
mixture in toasts , drizzle with more oil, and serve pronto.
* Also, a piece of Agrumi salami set right on top (the orange and cardamom flavors really compliment the dish) serves as a perfect garnishment.
