Armandino's Arugula and Fava Bean Crostini
Heres a recipe I got from Salumi's downtown. Ingredients

  • 1 cup fava beans, cooked in boiling water for 5 mins. Note: can use frozen if fresh not available). Also , edamame can be used as substitute.

  • 1/4 cup evoo

  • 1 1/2 cps arugula

  • 3 tbsp grated Parmesan

  • 1/2 tsp lemon zest

  • 1/2 tsp fresh lemon juice

  • Salt and pepper

  • Good baguette

  • Garlic cloves

  • 20 mint leaves

Directions

  1. Cook favas (peel if necessary), pulse in food processor to slightly coarse.

  2. Remove 1/2 and set aside.

  3. To the half still in the processor, add evoo,
    zest, lemon juice, 1/4 cup arugula, and salt and pepper to taste and purée
    til smooth.

  4. Fold in coarse favas and the remainder of arugula (chopped).

  5. Readjust salt and pepper.

  6. Slice baguette, drizzle with evoo and rub with fresh garlic.

  7. Spoon bean
    mixture in toasts , drizzle with more oil, and serve pronto.



* Also, a piece of Agrumi salami set right on top (the orange and cardamom flavors really compliment the dish) serves as a perfect garnishment.
